Recipes from Grandma Martineau

This is from an email my mom (Julie) sent almost two years ago a couple of Grandma Martineau's recipes.


Hi all, My friend Michele Peck went to school with Glen. She was going thru boxes of her mothers and found a cookbook with a couple of Grandma Martineau's (Mabel's) recipes in it. I am passing them along with best wishes for Thanksgiving. We are thankful for you all. Julie

Cranberry Salad
Dissolve 2 pkgs cherry jello in three cups hot water. Cool until slightly thickened.
Grind in food chopper:
1 large apple
1 lb cranberries
1/2 orange peel
Add:
2 C sugar
juice of 1 orange
Mix thoroughly and fold into jello and chill over night. For cranberry relish - omit jello

Graham Cracker Cake
4 dozen graham crackers rolled into crumbs. Mix in 4 T brown sugar and 1 sq melted butter. (These are her measurements and I cannot clarify)
Custard:
1 C milk
2 well beaten egg yolks
1/2 C sugar
2 T butter
Mix together in heavy sauce pan. Bring to a boil, stirring constantly. Cook until slightly thickened. Cool.
Fold in 1/2 C cream whipped and mixed with 2 stiffly beaten egg whites and 1 tsp vanilla. Press half of the crumb mixture into the bottom of a square cake pan. Pour custard over it. Sprinkle remaining crumbs over top. Pat down lightly. Chill in refrigerater several hours. Cut into squares. Serve with whipped cream
